This month’s recipe comes from Jodi Smith of Clements, Calif. She has two growing boys and a husband – I’m sure all of them just love to eat, so you could say she does some cooking! Try this recipe for a family sit-down dinner or for those long summer days of work and roping. Either way, it will have you making this dish more than once.

Stuffed Flank Steak    

1 large flank steak
3 tablespoons Parmesan cheese
4 tablespoons melted butter
1pkg mushroom onion soup mix
3 cups dry stuffing mix
3 cans mushroom gravy
1/4 cup water

Score flank steak on both sides. Mix cheese, soup mix, butter, stuffing and water together. Lay flank steak lengthwise and pile stuffing mixture onto steak then roll up and fasten with skewers. Put the whole thing in a crock pot, then pour three cans of mushroom gravy over the top, cover and set on “low” and let cook all day, slice and serve! I like to serve with mashed potatoes. Enjoy!
