First off, I would like to say Happy New Year! To start off the year of 2013, I decided to give something to those college students who will be returning back to school after the holiday break. I know all of you have gotten used to your mother’s home cooking over the break and were a bit spoiled. Bill McDonald from Galt, Calif., who is currently a student at California State University in Chico, shared with me something I thought would be perfect for all you college students out there. Also, I’m happy to say that this is the first man who has sent a recipe to me, so thank you Bill! Bill’s "College Student" Casserole

  • 2 lbs ground beef
  • 2 packets of taco seasoning
  • Biscuit mix (we used Bisquick)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 8 oz. cheddar cheese (shredded)
  • 1 yellow onion
  • Tomatoes

Heat oven to 325 degrees F.

Brown the ground beef and add taco seasoning. In separate bowl, combine cheese, mayonnaise, sour cream and half of the chopped onion; set aside. Prepare biscuit mix and use it to line the bottom and sides of a greased 9”x13” baking dish. Chop and saute the other half of the onion. Add ground beef to the top of the biscuit mix. Add tomatoes and sauted onion over the ground beef. Follow by pouring the sour cream, mayonnaise and cheese mixture over the top. Sprinkle a little bit of cheddar cheese over top if desired. Bake 30-40 minutes or until edges of biscuit dough are lightly browned.
