I've always loved to cook! Trying different meals, either from magazine clippings or friend’s family recipes, my motto is "I'll always cook it once, if you don't like it, I'm sure my dogs will!" My mother taught me the basics of cooking, the rest I've picked up from watching a million cooking shows and reading tons of cookbooks. But what I love the most is seeing the look on my friends' faces when I hand them their plate and they take that first bite!

This month I wanted to share with you a recipe I made just a few short weeks ago. This dish is very easy, affordable, and full of flavor! My favorite part about this dish is you can add what you want and make it your own. So, give it a try and see if you enjoy it as much as I have!

Lacey Maddalena from Browns Valley, Calif., shared with me one of her favorite recipes. She said, “It’s a super-easy recipe and so delicious, I created it when I had almost nothing in my cupboards!” I have begun to realize this summer that I love dishes I am able to make ahead of time, stick in the fridge, come in the house after a long summer night practice, and dinner is all done! No pots or pans to pull out – just turn on that oven and enjoy – no mess, just hungry mouths to feed!

This month’s recipe comes from Jodi Smith of Clements, Calif. She has two growing boys and a husband – I’m sure all of them just love to eat, so you could say she does some cooking! Try this recipe for a family sit-down dinner or for those long summer days of work and roping. Either way, it will have you making this dish more than once.
