Ladies and gents, if your New Year’s resolution was to lose weight or to eat healthier, I have found a piece to your puzzle! I received a comment asking me for a low-calorie dish, well, wait no more! I’ve found the perfect answer to your request. It’s low-calorie, satisfying and healthy for you! It comes from Robbie Andreotti from Colusa, Calif., passed down from her mother, Rina Broocchini, who in the past had entered the dish in a contest and came out a winner! It has a great taste and leaves you wanting another “guilt-free” bowl. Ask and you shall receive!
Wonderful Vegetable Soup
3 qts. chicken broth
3 med. potatoes, peeled and cubed
1/2 lb. fresh green beans
3 carrots, sliced
1 med. onion
2 tsp. salt
1/2 cup chopped parsley
1/4 tsp. pepper
1/2 lb. zucchini, halved and sliced
1 (16-oz.) can kidney beans, drained
1 (6-oz.) can tomato paste
4 cloves garlic, mashed
1/2 cup grated Parmesan cheese
1/2 cup olive oil
Combine broth, potatoes, green beans, carrots, onion, salt and pepper in a kettle and bring to a boil. Reduced heat, simmer covered for 10 minutes. Add zucchini and beans and simmer for 10 minutes. Mix garlic, tomato paste, and parsley in food processor (or mix in bowl). Slowly add olive oil. Add to the liquid. Heat and serve! 8 servings.
